Apple Cranberry Sauce

Yield: 2 cups or 6 servings

Ingredients:

  • 4 dried dates, pitted or 1 c . real maple syrup
  • 1 large orange or 1/4 c . fresh orange juice
  • 12 ounces fresh cranberries
  • 1 Pink Lady apples, peeled, cored and diced (try Braeburn, Gala, Fuji, or Granny Smith. Softer apples like Macintosh will just disintegrate.)
  • 1/3 - 1/2 cup water
  • Pinch sea salt
  • clove, anise, and ginger
  • chopped nuts - walnuts
  • 4 whole cloves
  • 1-2 sticks cinnamon
  • 1 tsp . orange zest
  • 1 small jalapeño, stemmed and thinly sliced

Directions:

  1. Place dates in small bowl and cover with boiling water and soak about 10 minutes.
  2. Drain.
  3. Place dates in a food processor; purée until smooth.
  4. Using a peeler, remove the peel from the orange, taking off as little of the white pith as possible. Cut the peel into very thin strips about 1 1/2 inches long.
  5. Squeeze the juice from the orange.
  6. Rinse the cranberries in a colander and pick out any mushy ones. 
  7. Simmer all ingredients for 10 minutes.
  8. Stir in orange zest and add orange twist and serve.
  9. Store in refrigerator for 5 to 7 days.
